Corned Beef Brine

Found another recipe for the brine for the corned beef

4qts water
1 cup kosher salt
12 cloves garlic crushed
3 tbls pickling spice
8 bay leaves

this is for 3-4 lbs of brisket
mix ingrediants and soak brisket for 7 to 21 days flipping daily



If life is a highway, I need a new map.

Wonder how it would be brined and smoked?

It should work the same way OO...Chick's recipe called for Tender Quick which does the curing just like the brine

It's just dry cure vs brine cure but should have the same results

The recipe did say if you brined it for more than 14 days you might soak it in clear water for a day or two.

This is Corned Beef, mine was Pastrami. Pastrami is dry and smoked, Corned Beef is pickled and soaked in a brine, they are both started from brisket.
